Stuffed Green Peppers

I've made this often. The last time I made it, I topped it with bit of sour cream and some avocado. It was fantastic, but if you do this you need to account for the carb counts. :-)

Ingredients

  • 2 large green peppers, halved lengthwise
  • 1 pound ground beef
  • 1/4 cup onion, chopped
  • 1 clove garlic, minced
  • 1/2 cup tomato, chopped
  • 4 ounces cheddar cheese, shredded
  • 2 ounces cheddar cheese, shredded, for topping

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large pot, bring water to a boil.
  3. Add the peppers(already halved and seeded) and boil for 3 minutes; drain.
  4. Brown the hamburger, onion and garlic. Drain the fat and stir in the tomatoes and cook until they are hot.
  5. Remove from the heat and stir in the 4 ounces of cheese.
  6. Place the pepper halves in a greased 8x8" baking pan and fill with the meat mixture. Sprinkle the extra cheese on top
  7. Bake at 350 for 20 minutes.
  8. Remove and place on a cooling rack if not serving immediately.

I've made this recipe multiple times and every single time my husband comments on how it is the best he's ever tasted.

Ingredients

  • 2 pounds ground beef
  • 1 cup pork rinds, crushed
  • 2 eggs, lightly beaten
  • 8 ounces tomato sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons dried parsley
  • 1/4 cup mozzarella cheese
  • 1/4 cup diced onions

Instructions

  1. 1. Preheat oven to 350 degrees. Mix all ingredients.
  2. 2. Transfer mixture to a baking pan. Bake for 1 hour.

Meat & Cheese Casserole

This is one decadent dish!! It tastes so heavenly you will think you are cheating!

Ingredients

  • 12 oz ham, cubed
  • 8 oz cooked chicken (1 large chicken breast), cubed
  • 6 oz Mozzarella Cheese
  • 8 ounces cream cheese, softened
  • 1/2 cup mayo
  • 1/4 cup heavy cream
  • 1 clove garlic, minced
  • 1/8 teaspoon dill weed
  • 1 teaspoon dried minced onion
  • 1 teaspoon dried parsley

Instructions

  1. Put the chicken, ham and cheese in a greased 11x7" baking dish.
  2. In a bowl, blend the heavy cream and mayo into the cream cheese until smooth.
  3. Stir in the garlic, dill weed, onion and parsley.
  4. Pour over the meat and cheese and stir everything together.
  5. Bake at 350º for about 25 minutes until bubbly and browned on top.

Notes

This comes out of the oven quite oily. You are going to want to let it set for a few minutes before you plate it up so it can solidify a little. The portions aren't that big, so I paired it with cut green beans. You will want a side dish with this.

Next time I will probably put it in a smaller baking dish or as my husband suggested, add some cauliflower to bulk it up and give it a bit of a pasta texture.

Ingredients

  • 24 ounces canned chicken
  • 2 medium zucchini, sliced lengthwise with mandolin or vegetable peeler into noodles
  • 1 cup frozen bell pepper strips thawed
  • 1 cup Cut Green Beans
  • 15 ounces Bertolli Alfredo Sauce
  • 1 cup Shredded Cheddar cheese
  • 1/4 cup Parmesan cheese

Instructions

  1. Preheat oven to 350 degrees
  2. Spray 2 qt. casserole dish with non-stick cooking spray.
  3. Mix together chicken, zucchini noodles, pepper strips, and green beans.
  4. Stir in Alfredo sauce.
  5. Add shredded cheese and stir until mixed.
  6. Pour evenly into casserole dish.
  7. Sprinkle Parmesan cheese on top.
  8. Bake for 1 hour

Notes

While this is tasty, I hesitate to call it a casserole. It doesn't really solidify and makes more of a messy side dish. And I'm totally okay with that. I think if I were to make this again I would use real chicken(not canned) and have some egg or something more solidifying to see if it would hold together. It's still really yummy!

Bacon Cheddar Ranch Chicken

Made this last night and it was soooo good. Even reheated in the microwave at work today it was just as good. So yummy!

Ingredients

  • 3 skinless, boneless chicken breast halves
  • 1 tablespoons teriyaki marinade sauce
  • 2 tablespoons Ranch dressing
  • 1 cup shredded Cheddar cheese
  • 3 slices cooked bacon, broken into small pieces

Instructions

  1. Preheat oven to 350 degrees
  2. Place chicken in 9×13 baking dish.
  3. Brush teriyaki sauce over top of chicken, then cover evenly with Ranch dressing.
  4. Sprinkle cheese and bacon on top.
  5. Bake for 30 minutes.

Makes 3 servings Net Carbs per serving: 1.7

Ingredients
  1. 5 eggs
  2. 1/2 cup heavy cream
  3. 1/2 cup water
  4. 1/2 cup shredded mozzarella
  5. 1/4 cup bacon bits(real bacon)
  6. 12 slices of thinly sliced ham
Instructions
  1. Preheat oven to 350 degrees.
  2. Whisk eggs together in a bowl.
  3. Add remaining ingredients, except for ham, and stir to combine.
  4. Spray a muffin pan with cooking spray.
  5. Fit one slice of ham in each muffin space.
  6. Spoon about 3 Tablespoons of egg mixture into each chamber so that it is 3/4 full.
  7. Use a fork to distribute cheese, if necessary.
  8. Bake for about 25 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove from oven and cool for about 10 minutes.

  • 4 Large Eggs
  • 4 TBLS Grated Parmesan Cheese
  • ¼ cup or 4 TBLS Almond Flour
  • 2 TBLS Water
  • Butter to grease the tins.

Instructions

  1. Whisk everything together in a bowl.
  2. Preheat oven to 350 degrees
  3. Grease the muffin tins heavily, this tends to stick even to non stick surfaces.
  4. Ladle the mixture into the muffin top tins and pop in the oven.
  5. Bake for 15 mins or until golden brown on top
  6. Net carbs per bun set: 1

Pretty darn tasty. Hubby raved about it and it was pretty easy to put together.

Ingredients

  • 1 pound ground beef
  • ¼ cup finely chopped onion
  • 1 TBLS chili powder
  • ½ tsp cumin
  • ½ tsp yellow mustard
  • Dash of hot sauce
  • 8 ounce can tomato sauce
  • 3 sliced hot dogs(in the round)
  • 2 eggs
  • ½ cup mayonnaise
  • ¼ cup heavy cream
  • 8 ounces shredded cheddar cheese

Instructions

  1. Brown the hamburger and onion and drain the fat.
  2. Stir in the seasonings, mustard, hot sauce, tomato sauce and hot dogs.
  3. Spread in a greased large pie plate; stir in half of the cheese.
  4. Beat the eggs well; whisk in the mayonnaise then the cream. Beat well until smooth. Stir in the remaining cheese.
  5. Pour over the meat mixture and spread evenly.
  6. Bake at 350º 30-35 minutes. Let stand 10 minutes before cutting.

Ingredients
  • 3-4 slices bacon, chopped
  • 6 eggs
  • 1 cup heavy cream
  • ½ teaspoon salt
  • 8 ounces Mozzarella cheese, shredded

Instructions
  1. Fry the bacon pieces until brown and crispy; drain on paper towel.
  2. In a medium bowl, beat the eggs. Add the cream and salt; mix well.
  3. Arrange the cheese and bacon evenly in the bottom of a greased 9-10 inch glass pie plate.
  4. Pour the egg mixture over the cheese.
  5. Bake at 350º, 35-40 minutes, until a knife inserted in the center comes out clean.

  • 1 cup almond flour
  • 2 eggs
  • ¼ cup water
  • 2 tsp oil
  • 1 pkt Splenda

Instructions
  1. Mix everything together and pour into a nonstick pan with a little bit of oil. Cook until golden brown and then flip and do the same on the other side.
  2. I serve this with a pat of butter melted on top with a packet of splenda mixed in.
